Restaurant Jansz. reopens with new chef

Restaurant Jansz., part of the Pulitzer Hotel in Amsterdam, reopens its doors with a new chef: Arnout van der Kolk. He launches a new menu that is an ode to the city. I was invited to come over for lunch with some of my gourmet friends…. Restaurant Jansz. is an elegant, but no-nonsense place on the canals and in the heart of the Nine Streets area, where guests can enjoy a casual meal, a cocktail or an entire evening filled with different courses and beautiful wines.

New chef Arnout van der Kolk (38) has worked at Envy, Oud Sluis and as a Sous Chef at Ciel Bleu, and for the past 5.5 years he has been the head chef at Restaurant C. According to Arnout, good food goes hand in hand with culture and bringing people together. And man, did we miss that last year!

The dishes on the menu are seasonal and what stands out is that there are more vegetarian and fish dishes on the menu than before. For example, the summer menu features beet with herring, yogurt and rye bread and tomato salad with avocado, fermented cucumber, celery and tomato water. A significant part of the menu will keep changing throughout the year, but true Jansz. classics like the grilled half lobster will remain.

The kitchen uses, as much as possible, only local ingredients. Beets, polder chicken, fish from the North Sea, Dutch beef: all beautiful products that guests will find on the menu.

My favorite lunch dishes at Jansz. | Amsterdam

My absolute favorites on the lunch menu are the soft Lobster Roll with apple and the toast with North Sea crab with fresh lime. Delicious! The seafood dishes are all works of art and incredibly delicious. The green asparagus with anchovy butter and pickled egg are perfectly prepared. Try the super fresh burrata with zucchini, cavatappi pasta and chili pepper. When dining at Jansz. restaurant, try the sea bass crudo with fennel, Madame Jeanette and orange! Save some room for dessert. The peanut caramel sundae is divinely delicious and the fresh rhubarb with cardamom and elderflower is a lovely, crisp, summer finish. Add dangerously delicious cocktails and a very extensive wine list to that and you get it: I’ll be back soon!
