This stunning, remote resort is owned by legendary film director Francis Ford Coppola. Both he and his daughter Sofia have a house on the property, which tells you everything you need to know. My cottage had divine Creole coconut cookies on the table, a shellphone to contact reception and dangerously good Coppola wines in the minibar. From my balcony I looked out over the river and the waterfall; it was the kind of view that makes leaving feel genuinely painful. La Isla Bonita. In short: the ultimate Caribbean paradise. Madonna reportedly discovered the island in the eighties and was so impressed, she wrote a song about it. When you wake up in your comfortable king-size bed, the first thing you want to do is jump into one of the pools or dive straight into the ocean. All the cabanas are comfortable and fully equipped; the love is truly in the details. The decoration is beautiful and, additionally, use of paddle boards, tubes, bikes and even a mobile phone is complimentary. For a proper splurge, Prana Maya Island Resort is in a league of its own. This boutique luxury resort sits on a private island just a five-minute boat ride from Placencia Village, which already sounds like something out of a movie. Deep in the jungle in the south of Belize you find the stunning Copal Tree Lodge, formerly known as the Belcampo Lodge. The shower has a large glass window from which you can spot howler monkeys swinging past; a detail that is either wildly exciting or slightly alarming depending on your relationship with monkeys… They produce chocolate and coffee on the property, and the menu follows the farm-to-table concept, so most ingredients are grown right here. I would particularly recommend booking a kayak excursion through the surrounding jungle.

The name alone should tell you everything. Sleeping Giant Rainforest Lodge sits in the Cayo District, surrounded by lush jungle, dramatic karst mountains and the kind of silence that makes you realise how loud your normal life actually is. The lodge offers beautifully appointed cabanas with views straight into the rainforest canopy, and the on-site spa is the perfect reward after a day of cave tubing, hiking or zip-lining. Indeed, the combination of comfort and adventure here is genuinely hard to find elsewhere in Belize. If your idea of a good holiday involves waking up to howler monkeys, eating farm-fresh meals on a jungle terrace and spending your afternoons on a horse, a kayak or a yoga mat, then Jaguar Creek was essentially designed with you in mind. This intimate eco-lodge in the Cayo District is all about sustainable good living: think organic gardens, home-cooked food and a genuinely relaxed pace that makes it almost impossible to stress about anything. In fact, the hardest decision you will make each day is whether to go kayaking before or after lunch. Almond Beach Resort is the kind of place where you arrive planning to stay two nights and somehow end up rescheduling your flight. Located right on the beach in Hopkins, this all-inclusive resort offers spacious rooms, direct sea access and a genuinely laid-back Caribbean atmosphere that is, unsurprisingly, very hard to leave. Additionally, Hopkins itself is one of the most underrated villages in Belize: excellent Garifuna food, great drum music and a local vibe that the more touristy spots have long since forgotten. Another breathtaking resort owned by Francis Ford Coppola. This man clearly knows what he is doing. Both he and Sofia own a house here and, after staying here myself, I completely understand why. James Franco and Reese Witherspoon are reportedly regulars, which is either very impressive or very normal, depending entirely on your perspective. I spent my time between the pool and the ocean, enjoying a lobster ceviche I still think about to this day. Overall, Turtle Inn is the kind of place that quietly ruins all other hotels for you. How many days do you need in Belize?

At least two weeks is ideal to do Belize justice. That gives you enough time to explore the Cayes, visit the ATM Cave, discover the Cayo District and spend a few days in the south around Hopkins and Placencia. Four weeks, as I did, allows you to truly soak it all in without ever feeling rushed.
